A question I'm always being asked is 'what is your favourite malt whisky?' and my answer is always 'it depends on my mood and circumstance'. However, the distillery I have a particular fondness for is Highland Park, possibly because I've always felt at home on Orkney and the various expressions reflect that feeling, perhaps it just brings back very fond memories. Perhaps because the distillery has it all - at present the most northerly distillery in the British Isles...just, the peat for the lightly peated malt is cut nearby, and used in it's own maltings, this is then blended with unpeated malt from the mainland producing a malt tasting of heather with hints of peat and sweetness. It is an old distillery founded in 1798 on the site of an illegal still. The distillery has four stills.
