This Penderyn expression has been matured in dry Oloroso Sherry casks and bottled at 46%abv.
The Penderyn spirit is recycled through the still two to three times, producing a very clean spirit at 80% alcohol. This clean spirit shortens the maturation period, giving a smooth, floral style of whisky.
The Penderyn distillery is near Brecon, South Wales
Wales has a long history of distilling, with records going back as far back as the 4th century. Originally the spirit was simply distilled using barley, yeast and honey. Distillation was also carried out at Dale in Pembrokeshire by one of the founders of the Kentucky Whiskey industry, Evan Williams, when he emigrated there. The last known legal distillery in Wales was Frongoch near Bala in North Wales which closed at the end of the 19th century.
